Best Free Midi Keyboard Software
Loads of templates in Lemur and on the users website if u own the app. Worth a look
TB Midi Stuff is also good. Both it and Midi Studio Pro are good for straightforward midi control.
Lemur is great if you need full scripting capabilities, though it has a bit of a learning curve.
MIDI Designer Pro is very good too. Those mentioned above (and MDP) are all good, mature apps at this point. There are tons of others. Going to come down to personal preference and community. If you already know which apps you want to control you might start by looking for templates others have made. That could give you a jump start. Other than Lemur, they're all pretty much caveman simple to use (to varying degrees) but it can take a few evenings to get something good together. Head starts are good!
I'm partial to TB myself but use most of them because there's always some nice person that has made and shared a template I'm after for some thing. How to get rid of congratulations you won on facebook.
One that I used to use a lot but have somehow stopped using is S1MIDITrigger. It's one of the easiest to use in that it allows you to easily create a panel layout and then quickly assign CCs (etc) to those controls. TB and MDP are more powerful and as a consequence require a little more overhead to do simple stuff. There's also a free version of S1.
TB midi stuff wins out for me. Lemur is potentially more powerful, but also more technical and a bit more cumbersome. TB is self contained (no need for an external editor to set up templates). It also has very nice built-in keyboard, drum pad, and mixer panels that can be popped up at any time over whatever custom template you've got going.

We have LK - Ableton & Midi Controller app for that purpose. It has several modules: Midi Pads, Midi Controller, XY Pad and a Chorder. It also has a Matrix module but right now is still not working in midi mode.
Some of the modules and most recent features are still not available on the store because I'm preparing a huge update to the app. However I would be happy to provide you access to the beta version of 1.2.0.

I think LK might please you. It is really easy to configure and use.
You can choose a diferente midi device and channel for each module, so you can play pads with one app, use the xy on another and play chords on a another, etc. In a near future, the matrix module will allow midi sequencing.

TB and Lemur can be set up so that each knob, fader, etc controls a different, or multiple destinations. The key is in ease of setup. With all that power comes complexity. TB is easier than Lemur IMO. I suggest checking out the online manuals.
If you're looking for something very handy, though a bit more basic, check out Midi Sidecar. It leverages the slide-over iOS feature, so it's easy to get to from almost anywhere.
Love Lemur for CC things. Regarding Ableton Live - if there is a great control solution, then it is still Touchable. Zero Latency.
